Gaby's was my hangout the first time I lived on Maui. When I came back to the island to visit, Gaby asked me if I wanted to work here. I moved back two weeks later.



I've been in the restaurant business since I was about 16 and I've worked everywhere from mom and pop shops to corporate chains. I like the mom and pop shops the best.



Gaby hires mainly females so we gather a male crowd. There are a lot of people who come in to play pool and sit at the bar. All the girls are really friendly with each other and with the customers so the environment feels really laid-back.



The restaurant changes from night to day. During the daytime, it's people on their lunch breaks and people coming out of the surf schools. During the night, it's full of both local and visitors who just want to let loose in a comfortable and casual place. It's unlike most restaurants you'll find—especially on Maui.



The best part of my job is that I can be a smartass and not get fired. For the most part I can be my own boss and if I don't want to serve someone I don't have to. I don't usually have that problem, though. We have a lot of really great regulars and that makes the job easier.



I have never worked for a better boss in my life. The workers are all friends and we have a lot of fun together. We are like a fun, dysfunctional family. It reminds me of home. MTW
