Max

East Maui eatery is a newbie but goodie

April 30, 2009
At first impression, Haiku comes off as a sleepy village with not much going on. But those of us who have lived there or currently do know there’s a vibrant community behind all the greenery and quiet roads, with the two canneries, Haiku and Pauwela, forming the commercial foundation. If you haven’t visited lately there are lots of reasons to.

At the Haiku Town Center across from the Haiku Cannery, a new restaurant, Max, has emerged from the abrupt closing of another. The new owners, John and Cristina Graziano, are forthcoming in their honesty and admit they aren’t seasoned restaurateurs. But, they’re quick to add, that has allowed them to stick to their guns and not skimp on the quality of their produce and ingredients—almost to a fault. Their ultimate aim is to provide good food at a great price, even if it cuts into the bottom line. That’s a length most seasoned food and beverage people won’t go to.

I can appreciate this rookie enthusiasm. And I appreciated the food, too. My first lunch was Caesar salad and a veggie sandwich, with a pizza to go. It was quiet in the restaurant as I slid in at the buzzer (lunch ends at 2:30pm). Fleetwood Mac’s “Tusk” was playing as I took in the pleasant green and brown decor accented with large canvas paintings of giant flowers and bamboo. The Caesar was huge, a meal in itself with authentic dressing and crisp, buttery croutons. The veggie sandwich was a masterpiece, arriving on toasted focaccia, stuffed with romaine, tomato, carrot shreds, red onion, avocado, grilled eggplant and cucumber with a tasty pesto spread. The really amazing thing about this sandwich was it was good the next day; the veggies went the distance and the bread was still soft.

Pizza is one of their signature items and worth ordering every time you stop by. The thin crust, handmade with organic flour, is full of great crust traits: a bit savory, chewy and crisp outside, soft inside. The ham was juicy and tender and the pineapple provided a fresh blast of fruit flavor with every bite.

Max also offers a delivery service, which makes me a bit jealous (there was no delivery service when I lived in Haiku!). Their voice-guided GPS-packing drivers will even go as far as Pukalani and Paia for hungry peeps.

My return trip to Max was a Friday night family event and the place was hoppin’. Benny Uetaki was strumming his island vibes, and the dining room was full. We opted for a booth to contain my unruly 3-year-old and settled in with the menu. The restaurant is a crossroads for Haiku neighbors and we saw lots of Upcountry friends fly by picking up take-out or dropping in to eat.

We dove into a plate of spicy chicken wings for starters. Owner John Graziano explained the wing recipe is uncommon, featuring smaller, less fatty fried wings. They went down fast, easy and just as messy as their more common counterparts. Next up, my dining mates and I ordered the island-grazed beef Milanese sandwich, chicken breast Parmesan and the BBQ baby back ribs. All were fantastic. The half-rack of ribs came with sautéed veggies, spaghetti with marinara and a salad for $15; all were prepared well, the ribs just barely clinging to the bone and smothered with a tangy peppery housemade BBQ sauce. My 3-year-old food critic put in her vote for the spaghetti, finishing it with a few big sloppy swoops of her hand. Somebody mentioned an improvement in the chicken breast Parm sandwich from the last time, a sure sign the kitchen is making an extra effort to fine-tune its repertoire.

Max is working hard for the East Maui and Upcountry crew and is looking to make itself a destination for family- and date-nights alike. They’ve got a kid-friendly menu, seductive chocolate desserts and a welcoming vibe, plus a pizza menu I can’t stop thinking about. They’re also conscious about supporting local growers and using organic ingredients. With daily specials to boot, there are more than enough reasons for folks from all over the island to head to the country for a delicious meal. MTW

Hi - East Maui?? I have lived in Haiku for 20 yrs , Why are people calling Haiku East Maui??? Hana is East, Keanae is east, Kaupo is east. Haiku is North shore, We are on the North/ West slope of the biggest part of Maui , Haleakala. Evan calling us Upcountry is a stretch since mostly we are under 1000ft el. Only in the last yr have I heard of Haiku as East. If I were from the East side I would be offended.

    So what about...
    May 05, 2009 | 02:42 AM

The EAST MAUI Animal Refuge, founded in 1977, is located in...Haiku. A google search for Haiku East Maui turns up 20,000 hits. The fact is, the directional orientations on Maui are based on where people live. If Wailuku and Kahului are Central Maui, then pretty much everything East of Paia is East Maui. Seems like semantics to me--definitely not a haole/Native thing. But on here, I guess everything turns into a haole/Native thing...

    Mo bettah place names!
    May 05, 2009 | 03:39 AM

Let's call Haiku "Breckenridge". Let's call Kipahulu "Shangri La". Let's call Kahoolawe "Lombok". Let's build a bunch of Balinese kit houses all over the island. Let's but Buddha statues everywhere. Let's put Daikoku-san statues in our homes and call them Buddhas because we don't know any better. Let's build sweat lodges. Let's wear leis and say aloha. Let's get our trousers in an uproar over corporations that employ people. Let's practice Tantric sexual spiritualism. Let's hold Tara workshops and drink ayahuasca psychedelic potions. Let's put up websites where we say that we are spiritually advanced and offer workshops to assist others in their own spiritual awakening. Let's piss off the locals, and shoot them with 22 calibre pistols when they break into our Door of Faith homes in 2008, which will be just enough to get them angry enough to bash our faces in with brass table lamps. Let's go to MCC, where nobody goes if they eat spam and weigh 300 pounds. Let's be cocktail waitresses in Kihei, and hook up everynight with a different unemployed homeless surfer stallion with 2 girlfriends and 3 kids. Let's just forget Maui, for fugsake, we came, we were blind, we made it into an amusement park.

we aren't doing anything else, why we came here.

    Wonderful...
    May 05, 2009 | 04:31 AM

...straw man you've created there. Didn't mention all the haoles who came here and had/have respect for the land and culture and have done/are doing productive things while being sympathetic to the desires of those who descended from the people who got here before the white man. (But yes, keep in mind, we ALL got here, none had people here since the beginning of time, Tahitians conquered and pillaged just the same, it's juts a matter of chronology).

WHY SO ANGRY? JUST BE HAPPY!
    May 09, 2009 | 08:06 PM

Yes, just talk about the good food! Why do you have to be so angry? If haoles around here want to open up a restaurant & give us another option for dining then hooray to them! If you want to open up your own restaurant then go ahead, don't just sit around complaining & being bitter about it!

    My pizza Max Experience
    July 16, 2009 | 04:31 AM

Well to start out I called for delivery and was denied. Funny when your motto is "WE DELIVER!" I ordered a salad and a sandwich after going through the menu with the employee. They have salads, pasta, sandwiches, pizza, etc...."NO PASTA for me" I said. I go in to pick up the order and an employee is chewing on pizza and says "Sorry its just to late," I walk in and everyone is sitting and waiting...I quickly paid for my food and left. In the car I took a quick look at the food and discovered that the order was wrong. PASTA with artichokes...something really heavy and not a salad. When I go back in and explain that my order is wrong...they proceed to tell me they stayed special to make my order and they won't even make me the salad that I wanted. I got my money back but left angry and hungry. My boyfriend said the chicken parm wasn't very good either. I will never return my business nor suggest any business to Pizza Max. Better Pizza a fews doors down anyway!

    great food,great service, great vibe!
    August 16, 2009 | 08:35 PM

Just got back from Max for the first time. Got the ceaser salad and garlic parmesan fries to start. Salad was huge for $7 and the fries rocked with garlicy goodness and shredded cheese throughout. We were almost full before we got our pizza. We opted for the peperoni pineapple thin crust. was really good. It was a slow sunday night but the waitress was attentive and quick to return with any extra little things we asked for. The owner stopped by to ask how everything was. There was a couple playing music ( not too loud or obnoxious, they were great)and the place had a nice atmosphere for a unpretentious restaurant. We live in haiku and are glad there is another place close that is such a gem. We will be back for sure to hit up the rest of the menu. Thanks MAX!
