Chef Duane Tsuburaya Benefit
Day Of Hope: Benefit for Chef Tsuburaya features all-day entertainment and ono grinds

August 11, 2010 | 03:14 PM The good folks at Capische? are going all-out for one of their own, hosting a benefit for Chef Duane Tsuburaya this Sunday, August 15, starting at 2:30pm and going 'til 7:30pm. In 2009, Chef Tsuburaya was diagnosed with Stage III Follicular Non-Hodgkin's Lymphoma, which is uncurable, but manageable with treatment.
The event, on the Hotel Wailea lawn, will feature entertainment all day from Arise, Unified Soul, Derrick Sebastian and Moku. The fabulous all-you-can-eat Capische? buffet is going to be an awesome sight, augmented by a sushi station with classic maki and inari. The slider station is going off with lamb sliders featuring shaved Maui onions, Sicilian spiced ahi with roasted pepper aioli and, for the vegetarians, grilled portabello mushrooms with rosemary aioli.
Some of the highlights in the buffet will be lasagna Bolognese made from a ragu of housemade pork sausage, beef and veal with locally grown tomato marinara made from scratch; Chef Kris Ethredges' famous traditional adobo chicken made from the classic, simple ingredients: garlic, bay leaves, shoyu and black pepper; and shrimp carbonara served with jumbo prawns, house-cured pancetta and penne pasta. At this point you may not care about the salads but I'm excited about the Caesar, made from locally grown romaine lettuce from Mike Makoi Farms and featuring dressing with dark and white balsamic. The tomato caprese is made from locally grown tomatoes, Italian-imported bufula mozzarella with Maui onions and a coriander vinaigrette.
They've got the sweet-tooths covered with plenty of desserts, including cupcakes, cookies and five-liqueur tiramisu. To keep your munchkins occupied while you eat, a keiki corner will have a jumping castle, snow cones, balloon animals, face painting and even a Wii gaming center.
If you like to combine eating with shopping you're in luck; the silent auction is packed with items including a handcrafted canoe, dinner for two at Feast of Lele, multiple gift certificates for restaurants, golf rounds at Wailea Golf Gold and Emerald Courses, sunglasses by Costa del Mar, fishing supplies, a photography session from Sara Quinn photography and massage gift certificates. Mulligan's on the Blue is the official after party, extending the festivities for those who have wrist bands from the event. Bolstering the cause, Mulligan's will donate $1 from every drink sold on Sunday night.
Amakebelieve company has designed a shirt for the event, selling for $20. Those who can't make it but would like to help can go to any First Hawaiian Bank and donate to "Duane's Day of Hope" (duanesdayofhope.webs.com).
