There’s hula, beautiful beaches and that lovely concoction of light and dark rum and pineapple juice. Right? Not so fast says managing partner Michel Roy and bartender Pepe Nuno of Mai Tai Lounge in Lahaina. A true mai tai has a number of ingredients—light rum, dark rum, orange curacao liquor (made on Oahu by the Portugese, btw) and orgeat syrup but no pineapple juice.
